Recently Google implemented an offline capability for Google Apps allowing you to edit and work on your Google Apps while not connected to the Internet. Now whether you are on an airplane or just disconnected, you can edit your documents, spreadsheets and presentations.
When you login to Google Docs you will see a new icon and Offline Settings link.

Google Docs uses Google Gears, a browser extension (available for OS X, Linux and Windows), to add offline functionality. Google Docs are accessed offline by clicking on the desktop shortcut that is downloaded during the installation process.
